I feel like I say this about every recipe, but this is one of my favorite recipes!! It is simple to make, tastes delicious and is pretty healthy. It is a great week-night meal to toss together in a hurry! Also, most of these ingredients I always have on hand in the pantry and freezer, so that makes it really easy for me!
Honestly, most Mexican style meals go over pretty well in our house! Whether it’s tacos, enchiladas or just chips and salsa, we love it all!
1 cup salsa
4 Tbsp Miracle Whip
1/2 tsp chili powder
10 flour tortillas
1-2 cups shredded cheddar
1 lb boneless skinless chicken breast, cooked & shredded
(You can add seasoning to the chicken if you want added flavor. My husband likes me to add paprika, cayenne, garlic powder and cumin.)
Mix together the salsa, miracle whip and chili powder.
Spread the salsa mixture evenly on 1 half of the tortilla.
Layer chicken and cheese evenly over salsa.
Fold Tortilla in half to enclose the filling.
Heat oil in a large skillet over medium heat.
Add quesadillas 2 at a time (if you can fit 2 in your skillet.)
Cook 4-5 minutes on each side or until golden brown.
Repeat with remaining quesadillas.
Cut each into 3 wedges.
Add you favorite toppings: sour cream, guacamole, hot sauce, etc.
